- 1 tablespoon tomato paste
- 6 cups water
- 8 oz three-cheese tortellini (refrigerated, such as Buitoni)
- 4 oz fresh spinach
- ½ cup heavy cream
- 4 tablespoons fresh thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Cook crumbled spicy Italian sausage until browned and drain excess grease.
- Sprinkle sausage with Italian seasoning and paprika; add sweet potato, garlic, red pepper flakes, and tomato paste.
- Stir and add 6 cups of water; bring to a boil.
- Reduce heat to simmer and cook for 15 minutes until sweet potatoes are tender.
- Add three-cheese tortellini; boil for an additional 10 minutes.
- Stir in fresh spinach until wilted; add heavy cream and mix well.
- Taste and adjust seasoning; serve with fresh thyme.
Notes
Using high-quality sausage will enhance the overall flavor.
Be cautious not to overcook the tortellini for the best texture.
Consider serving with crusty bread or homemade garlic bread.
