- 2 cups Heavy cream (cold)
- 28 Ladyfingers
- 2 cups Coffee (espresso or strong coffee)
Instructions
- Brew the coffee and let it cool.
- Combine mascarpone, granulated sugar, brown sugar, salt, and pumpkin pie spice in a mixing bowl and blend.
- Incorporate pumpkin puree into the mascarpone mixture until smooth.
- Whip the cold heavy cream and fold into the mascarpone mixture.
- Dip ladyfingers in cooled coffee for 1-2 seconds and layer in a baking dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and remaining mascarpone mixture, piping for decoration.
- Chill for at least 4 hours before serving.
- Sprinkle cocoa powder on top before serving.
