- 1 tablespoon salt
- 12 oz dried pasta (e.g., fettuccine or penne)
- ½ tablespoon olive oil
- 10 strips bacon, chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1½ cups heavy cream
- 1½ cups pasta cooking water
- 1 cup grated parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Bring a large pot of water to a boil and add salt.
- Cook the pasta for 2 minutes less than package instructions and reserve 1½ cups of the cooking water.
- In a frying pan, heat olive oil and cook bacon until crispy. Set aside, keeping the drippings.
- Sauté onion and garlic in the same pan until soft.
- Add heavy cream and pasta water, then bring to a simmer.
- Stir in parmesan cheese until melted.
- Toss in the drained pasta and mix well, adjusting sauce with reserved water as needed.
- Add the crispy bacon, season, and garnish with parsley before serving.
Notes
Crisp the bacon for the best texture.
Reserve pasta water to adjust sauce consistency.
Taste and adjust seasoning while cooking.
