- 4 ripe bananas (mashed, about 1½ cups)
- ¼ cup sour cream
- 8 oz cream cheese (softened)
- ¼ cup granulated sugar
- 1 large egg (for filling)
- 1 tsp vanilla extract (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×5" loaf pan.
- Whisk together flour, baking soda, and salt in a medium bowl.
- Cream the butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well, then stir in vanilla extract.
- Fold in mashed bananas and sour cream gently.
- Gradually stir in the dry mixture until just combined.
- In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
- Pour half of the banana batter into the loaf pan, layer with cream cheese mixture, and top with remaining batter.
- Bake for 55-65 minutes, or until a toothpick comes out clean.
- Let cool for 10 minutes in the pan before transferring to a wire rack.
Notes
Use overly ripe bananas for maximum sweetness.
Cover the top with aluminum foil if it browns too quickly.
Cool in the pan to maintain shape before transferring.
