  • 1 tsp vanilla extract (for filling)

Instructions

  • Preheat the oven to 350°F (175°C) and prepare a 9×5" loaf pan.
  • Whisk together flour, baking soda, and salt in a medium bowl.
  • Cream the butter and sugar together until light and fluffy.
  • Add eggs one at a time, mixing well, then stir in vanilla extract.
  • Fold in mashed bananas and sour cream gently.
  • Gradually stir in the dry mixture until just combined.
  • In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
  • Pour half of the banana batter into the loaf pan, layer with cream cheese mixture, and top with remaining batter.
  • Bake for 55-65 minutes, or until a toothpick comes out clean.
  • Let cool for 10 minutes in the pan before transferring to a wire rack.

Notes

Use overly ripe bananas for maximum sweetness.
