- 1 ½ pounds pork tenderloin
- ¼ cup (50 g) light brown sugar, packed
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic, minced
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 tablespoon unsalted butter
- 1 small Honeycrisp apple, peeled and diced
- ½ cup (50 g) fresh cranberries
- ½ cup (120 g) apple cider
- 2 tablespoons light brown sugar
- 1 ½ teaspoons apple cider vinegar
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Instructions
- Preheat your oven to 375°F (190°C).
- Mix light brown sugar, olive oil, garlic, salt, and pepper. Rub over the pork tenderloin.
- Place the tenderloin in an oven-safe skillet and roast for 30-40 minutes until it reaches 145°F (63°C).
- Let the pork rest for 10 minutes after removing it from the oven.
- In the same skillet, melt butter and add apple, cranberries, cider, brown sugar, vinegar, cinnamon, and nutmeg. Stir and cook until thickened.
- Return the pork to the skillet and spoon the sauce over it.
- Slice the tenderloin and serve with sauce.
Notes
Avoid overcooking the pork for best results.
Simmer the sauce adequately for enhanced flavor.
Use any preferred apple variety if Honeycrisp is unavailable.
