- 1 1/2 pounds lean ground beef
- 1 medium onion, chopped
- 2 large carrots, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 15-ounce can pinto beans, drained
- 28-ounce can diced tomatoes, with juice
- 1 cup Heinz chili sauce (NOT sweet chili sauce)
- 3 medium russet potatoes, peeled and chopped
- 1 cup frozen corn
- 1 1/2 cups frozen green beans
- 3 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1/2 teaspoon smoked paprika
Instructions
- Heat a large pot over medium heat and brown the ground beef.
- Add chopped onion and minced garlic, cooking until onions are translucent.
- Stir in diced carrots, beef broth, pinto beans, diced tomatoes, chili sauce, potatoes, corn, and green beans.
- Bring to a gentle boil, then reduce heat and simmer for 20-30 minutes.
- Ladle into bowls and garnish as desired.
Notes
For a healthier option, use lean ground beef or ground turkey.
Adjust seasoning to your taste, adding more chili powder for heat.
Let the soup rest for a few minutes before serving to enhance flavors.
