- 2 boxes cornbread mix
- 2 large eggs
- ⅔ cup milk
- 1–2 pounds ground beef
- 1 can Rotel (or a can of diced tomatoes with diced chilies)
- 1 can corn (drained)
- 1 can pinto beans (or Ranch Style Beans for more flavor)
- 1 cup shredded Mexican blend cheese
- 1 packet taco seasoning
- Toppings, as desired (sour cream, green onions, jalapeños, etc.)
Instructions
- Whisk together eggs and milk; set aside.
- Prepare cornbread mix as per instructions, adding egg and milk mixture.
- Brown ground beef in skillet; drain excess fat.
- Stir in taco seasoning, Rotel, and pinto beans; add drained corn.
- Mix cornbread mixture into beef mixture gently.
- Transfer to a baking dish; cover with foil.
- Bake at 425°F for 45 minutes until cooked through.
Notes
Use freshly cooked ground beef for best flavor.
Let casserole rest for a few minutes after baking for easier serving.
