  • 1 cup shredded Mexican blend cheese
  • 1 packet taco seasoning
  • Toppings, as desired (sour cream, green onions, jalapeños, etc.)

Instructions

  • Whisk together eggs and milk; set aside.
  • Prepare cornbread mix as per instructions, adding egg and milk mixture.
  • Brown ground beef in skillet; drain excess fat.
  • Stir in taco seasoning, Rotel, and pinto beans; add drained corn.
  • Mix cornbread mixture into beef mixture gently.
  • Transfer to a baking dish; cover with foil.
  • Bake at 425°F for 45 minutes until cooked through.
