- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- 8 tablespoons unsalted butter
- 4 cloves garlic minced
- 1 teaspoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon fresh lemon juice
- 2 tablespoons chicken broth low sodium
- ½ teaspoon red pepper flakes
- ½ teaspoon dried thyme
- ½ teaspoon paprika
- 2 tablespoons fresh parsley chopped
Instructions
- Pat dry the chicken breasts and pound slightly if needed for even thickness. Season both sides with salt, black pepper, smoked paprika, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and sear for 5 to 6 minutes per side until golden and cooked through to 160°F.
- Remove the chicken from the skillet and let rest for 5 minutes.
- Reduce heat to medium. In the same skillet, melt the unsalted butter.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in Dijon mustard, honey, lemon juice, chicken broth, red pepper flakes, dried thyme, and paprika. Simmer for 1 to 2 minutes until slightly thickened and glossy.
- Slice the rested chicken into thick strips. Return chicken to the skillet and spoon the butter sauce over the top.
- Let simmer gently for 2 to 3 minutes to coat the chicken.
- Sprinkle with fresh parsley and serve immediately.
Notes
Chicken can be marinated for extra flavor.
Adjust the spiciness by varying the amount of red pepper flakes.
Serve with rice or vegetables for a complete meal.
