Ingredients

  • 1 pound pecans, chopped
  • 1 pound dates, pitted and chopped
  • ½ pound candied cherries (red and green)
  • ½ pound candied pineapple (red and green or yellow)
  • ¾ cup granulated sugar
  • ¾ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • 3 large eggs
  • 1 teaspoon vanilla extract (or 1 tablespoon rum, bourbon, or brandy)

Instructions

  • Preheat the oven to 250°F.
  • Place a pan with boiling water on the bottom rack of the oven.
  • Prepare two 9-inch loaf pans with cooking spray and line with parchment paper.
  • In a bowl, mix chopped dates and nuts gently.
  • Sift flour, baking powder, and salt over the mixture and combine using hands.
  • Beat eggs and add vanilla or chosen spirit to the mixture, then combine everything well.
  • Fill the prepared pans with batter and press gently.
  • Bake for about 1 hour and 45 minutes.
  • Cool in the pans for 10-15 minutes before transferring to a wire rack.
