- 2 tablespoons butter
- 1 tablespoon light olive oil or vegetable oil
- 2 cups yellow or red potatoes ¼” to ½” diced
- 1 cup green bell pepper ½” diced
- 1 cup yellow onion ½” diced
- 1 pound cooked corned beef cubed ½” or shredded
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- fresh chopped parsley for garnish if desired optional
Instructions
- Melt butter and oil in a large nonstick skillet over medium heat.
- Add diced potatoes and green bell pepper, cooking for about 15 minutes until soft and lightly browned.
- Add onion, corned beef, salt, pepper, paprika, and garlic powder, stirring to combine.
- Cook for another 10-15 minutes until potatoes are golden brown and cooked through, with other ingredients well-colored.
- Taste and adjust seasoning with more salt and pepper if needed. Stir in parsley before serving.
Notes
Ensure the potatoes are diced evenly for uniform cooking.
Use leftover corned beef for an even quicker prep time.
Serve with eggs for a complete breakfast meal.
