  • ½ cup (72g) pumpkin seeds (pepitas)

Instructions

  • Preheat your oven to 350°F (175°C) and prepare the loaf pan.
  • Whisk together the dry ingredients in a medium bowl.
  • In a large bowl, mix the wet ingredients until smooth.
  • Combine wet and dry mixtures gently to avoid overmixing.
  • Pour the batter into the loaf pan and smooth the top.
  • Sprinkle pumpkin seeds on top.
  • Bake for 50-60 minutes, testing for doneness with a toothpick.
