- 8 Fajita Sized Flour Tortillas
- 1 cup refried beans
- 1 pound taco meat (seasoned ground beef or turkey)
- ¼ cup red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 small Roma tomato, diced
Instructions
- Preheat the oven to 400°F and prepare a cookie sheet with nonstick cooking spray.
- Bake tortillas for 3-5 minutes, flip, and bake for another 3-5 minutes until golden.
- Assemble pizzas by layering refried beans and taco meat on 4 crispy tortillas.
- Top with another tortilla, red enchilada sauce, cheese, and diced tomatoes.
- Bake for 5-8 minutes until cheese is melted and meat is heated through.
Notes
Using fresh tortillas gives the best texture and flavor.
