Ingredients

  • 1/2 cup cooking cream (15%)
  • 1/2 cup milk
  • 1 cup cooked and crumbled bacon (about half a regular-sized package or 68 slices)
  • 1/2 cup finely grated parmesan reggiano
  • 1 cup white cheddar cheese (strong or medium)
  • 3 green onions, washed, ends snipped, and finely chopped
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • A pinch of paprika
  • A pinch of celery salt
  • A pinch of nutmeg
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp kosher salt
  • 1/2 cup cold butter, diced
  • 46 tbsp ice cold water

Instructions

  • Preheat the oven to 400°F (200°C).
  • Combine flour and salt; mix in cold butter until crumbly.
  • Add ice-cold water gradually to form dough; chill for 30 mins.
  • Pre-bake the crust for 10 mins.
  • Cook and crumble bacon; set aside.
  • Mix eggs, cream, milk, and spices in a bowl; add green onions.
  • Distribute bacon and cheeses over the crust; pour egg mixture on top.
  • Bake at 425°F for 15 mins, then reduce to 325°F and bake for 30 mins until set.

Notes

For a flaky crust, ensure all ingredients are cold.
