Ingredients

  • 1 tsp salt
  • 1 1/2 tsp granulated sugar
  • 1/2 tsp baking powder
  • 2/3 cup unsalted butter, melted
  • 6 Tbsp cold water
  • 3 Tbsp holiday Jimmie sprinkles (plus more for topping)
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp ground cinnamon
  • 2 cups whole milk
  • 1/2 cup unsalted butter, cubed
  • 1 tsp vanilla extract
  • Whipped cream (optional for topping)

Instructions

  • Combine flour, salt, sugar, and baking powder in a bowl.
  • Stir in melted butter and cold water, then add Jimmie sprinkles.
  • Form dough, press into pie pan, and bake at 425°F for 10-12 minutes.
  • Cool crust and reduce oven to 375°F.
  • In a saucepan, whisk sugar, cornstarch, and cinnamon, then add milk and heat until boiling.
  • Stir until thickened, remove from heat, and add vanilla and butter.
  • Cool and mix in Jimmie sprinkles.
  • Pour filling into the crust and sprinkle more Jimmies on top.
  • Bake at 375°F for 20 minutes and cool.

Notes

Ensure butter is not too hot when mixing with dry ingredients to prevent cooking the dough.
Allow filling to cool slightly to maintain texture of the sprinkles.
