  • 2 large eggs
  • 1/3 cup sour cream
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, room temperature (for frosting)
  • 2 cups Truvia® Confectioners sweetener
  • 1 tsp vanilla extract (for frosting)
  • 1/4 tsp salt (for frosting)
  • Food coloring (red, green, yellow, gold)

Instructions

  • Preheat the oven to 350°F (175°C) and prepare cupcake pans.
  • Sift together dry ingredients in a large bowl.
  • Cream butter and Truvia® Sweet Complete™ until fluffy.
  • Add eggs one at a time and then mix in vanilla.
  • Incorporate sour cream and gradually add milk.
  • Fold dry ingredients into the wet mixture.
  • Fill cupcake liners and bake for approximately 22 minutes.
  • Beat frosting ingredients until light and fluffy.
  • Adjust frosting consistency and color as desired.
  • Frost cooled cupcakes and add decorative touches.

Notes

Use room temperature ingredients for better mixing.
Don’t overmix the batter for fluffy cupcakes.
Cool cupcakes completely before decorating.
