- 1 cup salted butter (2 sticks)
- 1 ½ cups light corn syrup
- 1 ½ cups granulated sugar
- 2 teaspoons vanilla extract
- 1 ½ cups salted cashews and/or peanuts (to taste)
- 8 cups corn Chex cereal
- Christmas M&Ms (optional)
Instructions
- Melt the butter in a saucepan over medium-high heat, then stir in corn syrup and sugar.
- Bring to a boil and cook for 3 minutes, stirring occasionally.
- Remove from heat and mix in vanilla extract.
- Coat the nuts in the syrup and pour it over the Chex cereal in a large bowl.
- Mix gently to combine, then add M&Ms once slightly cooled.
- Spread on a greased baking sheet to cool completely.
- Store in Ziplock bags or mason jars.
Notes
Use a large saucepan to avoid spills during boiling.
Consistently stir while boiling to prevent burning.
Experiment with different nuts for varied flavors.
