Instructions
- Preheat oven to 350°F and prepare a jelly roll pan.
- Beat eggs until foamy and light yellow.
- Mix in granulated sugar until the mixture thickens.
- Add oil, baking powder, salt, and vanilla; mix until smooth.
- Gently incorporate flour without overmixing.
- Spread batter in the pan and bake for 10-15 minutes.
- Cool the cake, then roll it in a towel with powdered sugar.
- Prepare cream cheese mixture with sugar and vanilla.
- Whip heavy cream to stiff peaks and fold in sprinkles.
- Unroll the cooled cake, spread filling, and roll it back up.
- Make ganache by heating chocolate chips and heavy cream; whisk until smooth.
- Drizzle ganache over the chilled cake roll and top with more sprinkles.
