- 3 grilled chicken breasts (about 1 pound), diced small
- 1–½ cups pitted Greek olives
- ¾ cup crumbled feta cheese
- 2 medium tomatoes, cored, seeded, and diced
- 1 medium English cucumber, diced
- 1 bell pepper, cored and diced
- 1 small red onion, finely diced
- 2 tablespoons fresh basil, minced
- 1 tablespoon fresh marjoram, minced (or 1 teaspoon dried)
- 1 tablespoon fresh oregano, minced
Instructions
- Whisk olive oil, red wine vinegar, kosher salt, and black pepper in a bowl until emulsified.
- Add grilled chicken, Greek olives, feta cheese, tomatoes, cucumber, bell pepper, and red onion to the bowl.
- Sprinkle in fresh basil, marjoram, and oregano, then gently toss until well combined.
- Serve immediately or refrigerate to chill before serving.
Notes
Grill the chicken with seasoning for enhanced flavor.
Adjust vegetable quantities as per personal preference.
Add the dressing just before serving to maintain freshness.
