- 1½ cups dairy-free unsweetened plain thick coconut or cashew-based yogurt
- ⅓ cup creamy cashew butter (or preferred nut/seed butter)
- 2 tbsp maple syrup (or preferred sticky liquid sweetener)
- 1–2 tsp plant-based unflavored or vanilla protein powder (optional)
- ½ tsp vanilla extract
- ½ cup dairy-free chocolate chips (or semi-sweet/dark chocolate chips)
- 1 small banana, sliced
- 1 tbsp grain-free or gluten-free granola (or a mix of sliced almonds, chopped pecans, and sunflower seeds)
Instructions
- Combine yogurt, nut butter, maple syrup, and vanilla in a bowl; whisk until smooth.
- Spread yogurt mixture onto a lined baking sheet into a rectangle about ¼ inch thick.
- Melt chocolate chips using a double boiler or microwave; optionally mix in coconut oil.
- Drizzle melted chocolate over yogurt, and swirl for a marbled effect.
- Add banana slices and granola on top.
- Freeze for about 3 hours until firm.
- Cut or break into pieces once firm.
Notes
Store in an airtight container in the freezer to keep fresh for up to 3 months.
