  • 3 large eggs
  • 1 cup whole milk
  • 1/2 cup strongly brewed coffee
  • 1 pint heavy whipping cream
  • 2 tablespoons granulated sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 3 ounces bittersweet chocolate bar (shaved, optional)

Instructions

  • Preheat oven to 350℉ and grease a 9×13 inch baking pan.
  • Whisk together granulated sugar, cocoa powder, flour, baking soda, baking powder, and salt in a large bowl.
  • In another bowl, combine vegetable oil, vanilla, eggs, and milk. Mix until smooth.
  • Pour the wet mixture into the dry ingredients and stir until smooth. Add brewed coffee and mix until combined.
  • Pour batter into prepared pan and bake for 30-35 minutes until toothpick comes out clean. Let cool in pan.
  • For frosting, beat heavy cream, sugar, and vanilla until stiff peaks form.
  • Spread frosting over cooled cake and garnish with shaved chocolate if desired.
