- 1 stick unsalted butter, softened
- ⅓ cup granulated sugar
- ⅔ cup packed brown sugar
- 3 large eggs
- ¼ tsp peppermint extract
- 1 ⅓ cups all-purpose flour

- 1 tsp baking soda
- 1 tsp espresso powder
- ¾ cup whole milk or 2% milk
- ½ cup dark chocolate chips
- Pinch of salt
- 2 cups powdered sugar
- 4 tbsp whole or 2% milk
- ¼ tsp peppermint extract
- 1 tbsp Greek yogurt
- 3 tbsp crushed candy canes
Instructions
- Beat together softened butter, granulated sugar, and brown sugar until creamy.
- Mix in baking powder, baking soda, espresso powder, salt, and cocoa powder.
- Add eggs one at a time and then the peppermint extract, mixing until smooth.
- Gradually alternate adding flour and milk until fully incorporated.
- Fold in dark chocolate chips gently.
- Prepare the loaf pan and pour the batter in.
- Bake in a preheated oven at 350°F for 50 to 60 minutes until a toothpick comes out clean.
- Let cool, then prepare the frosting and spread it on top.
- Decorate with crushed candy canes before serving.

Check doneness with a toothpick; the deep color might mislead you.
