  • 1 cup semisweet or dark chocolate chips
  • 1/3 cup creamy peanut butter (for topping)
  • 1 teaspoon coconut oil (optional, for firmer topping)
  • 1/3 cup mini M&Ms (optional)

Instructions

  • Line muffin pan with paper liners or use a silicone muffin pan.
  • Melt peanut butter and honey in a microwave-safe bowl until smooth.
  • Combine oats and optional seeds in the melted mixture and stir to coat.
  • Press mixture into lined muffin cups firmly.
  • Melt chocolate chips, peanut butter for topping, and coconut oil in a separate bowl.
  • Drizzle melted chocolate over the pressed oat mixture.
  • Sprinkle optional mini M&Ms on top.
  • Chill in the fridge until chocolate is firm, about 30 minutes.

Notes

Firmly pressing the mixture helps bars hold their shape.
Mixing different chocolate chips can add flavor variety.
Feel free to add nuts or dried fruits for texture.
