- 1 cup creamy peanut butter
- 1 and 1/2 cups powdered sugar
Instructions
- Preheat your oven to 350°F and line baking sheets with parchment paper.
- Melt butter and chocolate chips together, then cool slightly.
- Whisk in granulated sugar, eggs, and vanilla until smooth.
- Combine dry ingredients and add gradually to wet mixture; stir until just combined.
- Form dough into discs and bake for 8 minutes until edges are firm.
- Let cookies cool completely on baking sheets.
- Prepare peanut butter filling by beating room temperature butter and peanut butter, then gradually add powdered sugar.
- Layer cookies with peanut butter filling until all are stacked.
- Frost the top layer and decorate if desired.
- Slice and serve, pairing with cold milk or vanilla ice cream.
