  • 1/3 cup plain Greek yogurt (low fat or full fat)
  • Egg noodles, for serving
  • Chopped flat leaf parsley, for garnish

Instructions

  • Coat chicken pieces with a mixture of flour, smoked paprika, garlic powder, salt, and pepper.
  • Heat olive oil in a skillet and sear the chicken until golden brown, then set aside.
  • Sauté onions and mushrooms in the same skillet until softened.
  • Add garlic and thyme, cooking for an additional minute.
  • Sprinkle in flour and stir, followed by chicken broth, Dijon mustard, and sherry vinegar. Thicken the sauce.
  • Stir in Greek yogurt off the heat, adjusting seasoning as needed.
  • Serve over egg noodles, garnished with parsley.
