- 1 packet Brown Gravy Mix (0.87 oz.), or homemade brown gravy
- 2 small boneless skinless chicken breasts
- Salt and pepper, to taste
- 3 tablespoons all-purpose flour
- 1–2 tablespoons olive oil
- 1 tablespoon salted butter
- 1 small yellow onion, sliced
- 3 cloves garlic, minced
- 1 cup dry white wine (or chicken broth)
- 8 oz. tomato sauce
- 3/4 lb. thin spaghetti (or slightly less for a saucier pasta)
- 1/2 teaspoon EACH: Italian seasoning, dried parsley, mustard powder
- 1/4 teaspoon salt
Instructions
- Mix the gravy packet with cold water until smooth and add tomato sauce and seasonings.
- Cut chicken breasts into cubes, season with salt and pepper, and coat with flour.
- Heat olive oil in a skillet and sear chicken until golden brown, then remove from skillet.
- Deglaze the pan with white wine, scraping up brown bits.
- Sauté sliced onions until soft, then add minced garlic and remaining wine.
- Combine the gravy mixture with the onion-garlic mix, bring to a boil, then reduce to a simmer and add chicken.
- Boil spaghetti in salted water until al dente, then drain.
- Add cooked spaghetti to the sauce and toss to coat.
Notes
Use quality wine to enhance the sauce.
Cook onions slowly for a richer flavor.
Adjust seasonings to suit your taste.
