- 8 ounces penne pasta
- 1 1/2 pounds boneless, skinless chicken breasts, diced into 1/2 inch pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 24 ounces (3 cups) marinara sauce
- 1/3 cup shredded Parmesan cheese
- 2 teaspoons Italian seasoning
- 1/2 teaspoon garlic powder
- 1 1/2 cups shredded mozzarella cheese
Instructions
- Boil water in a large pot.
- Cook penne pasta until al dente according to package directions, then drain and reserve 1/2 cup pasta water.
- Season chicken with salt and pepper, then sauté in olive oil until cooked through.
- Add marinara sauce, Italian seasoning, garlic powder, and Parmesan to the skillet with chicken.
- Fold in the drained pasta and reserved water, simmering for 4-5 minutes.
- Top with mozzarella cheese, cover, and let sit for about 5 minutes to melt.
Notes
Do not overcook the pasta; it should remain firm.
Adjust the marinara sauce to your taste for a saucier dish.
