- 3/4 cup granulated sugar
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1/4 cup maraschino cherry juice
- 2 large eggs
- 1/2 cup sour cream
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 cup maraschino cherries, chopped
- 1 cup powdered sugar
- 2–3 tablespoons heavy cream or milk
- 1/2 teaspoon almond extract
- 1–2 drops cherry extract or 1 tablespoon maraschino cherry juice
Instructions
- Preheat the oven to 350°F (175°C) and prepare a loaf pan.
- In a large bowl, whisk together sugar, almond extract, vanilla extract, vegetable oil, milk, cherry juice, eggs, and sour cream.
- In another bowl, combine flour, baking powder, and salt.
- Fold the dry mixture into the wet mixture until just combined.
- Gently fold in chopped cherries.
- Transfer batter to the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- While cooling, mix powdered sugar, heavy cream, almond extract, and cherry juice for the glaze.
- Once cool, drizzle the glaze over the bread and enjoy.
Notes
Ensure maraschino cherries are well-drained to prevent excess moisture.
For added crunch, top with chopped nuts before baking.
Store leftovers in an airtight container for up to 3 days.
