- 2 (12 oz.) jars maraschino cherries, drained and minced (reserve juice)

- 1 cup granulated sugar
- 1 cup powdered sugar

- 2 tsp. cherry extract
- 4½ cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 4 tbsp. unsalted butter, melted
- 1/3 cup + 1–2 tbsp. maraschino cherry juice
- 1 tsp. almond extract
- 1 tsp. cherry extract
- 4–5 cups powdered sugar
- ½ cup slivered almonds for garnish
Instructions
- Drain and mince the cherries, pat them dry, and set aside.
- Mix butter, oil, granulated sugar, and powdered sugar until smooth.
- Incorporate eggs, almond extract, cherry extract, and cherries, mixing thoroughly.
- Whisk together flour, baking soda, and cream of tartar in a separate bowl.
- Gradually combine the dry mixture with the wet mixture gently.
- Prepare baking sheets and drop cookie dough onto sheets.
- Bake at 375°F for 8-11 minutes, then cool on a wire rack.
- Make icing by whisking butter, cherry juice, almond extract, and cherry extract, then add powdered sugar, and frost the cooled cookies.
Notes
Ensure cherries are well dried to keep cookies from becoming soggy.
Room temperature butter helps achieve a creamier texture.
Monitor baking time closely for perfect softness.
