- 4–6 cups shredded zucchini
- 1 cup Bisquick mix
- 3 cups shredded cheddar cheese
- 1 large onion, shredded
- ½ cup canola oil
- 4 large eggs, beaten
- Salt and pepper to taste
Instructions
- Preheat oven to 350ºF.
- In a large bowl, combine the shredded zucchini, Bisquick, 2 cups cheddar cheese, shredded onion, canola oil, beaten eggs, salt, and pepper.
- Grease a 9×13 baking dish.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle the remaining cup of cheddar cheese on top.
- Bake for 55-60 minutes until golden brown and set.
- Let cool for a few minutes, then cut into squares and serve.
Notes
Use fresh zucchini for the best flavor.
Drain excess moisture from the zucchini to prevent a soggy bake.
Feel free to experiment with different cheeses.
