Ingredients

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional)

Instructions

  • Heat olive oil in a skillet and cook onion and garlic until fragrant.
  • Add ground beef, seasoning with salt and pepper, and brown until no longer pink.
  • Stir in sliced zucchini and drained diced tomatoes with Italian seasoning; cook until zucchini is tender.
  • Preheat oven to 350°F (175°C). Layer half of the beef mixture in a greased baking dish, followed by half of the cheese. Repeat the layers.
  • Optional: Sprinkle breadcrumbs on top.
  • Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10-15 minutes until golden.
  • Let cool for 5 minutes before serving.

Notes

Use fresh zucchini for the best texture.
