- 1 pound ground beef
- 2 medium zucchinis, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup breadcrumbs (optional)
Instructions
- Heat olive oil in a skillet and cook onion and garlic until fragrant.
- Add ground beef, seasoning with salt and pepper, and brown until no longer pink.
- Stir in sliced zucchini and drained diced tomatoes with Italian seasoning; cook until zucchini is tender.
- Preheat oven to 350°F (175°C). Layer half of the beef mixture in a greased baking dish, followed by half of the cheese. Repeat the layers.
- Optional: Sprinkle breadcrumbs on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10-15 minutes until golden.
- Let cool for 5 minutes before serving.
Notes
Use fresh zucchini for the best texture.
