- ½ cup butter
- 20 oz mini marshmallows
- 9 oz box rice crispy cereal
- 2 tsp vanilla
- ½ tsp salt
- red and orange food coloring
- 1 cup green candy melts
- 1 cup orange candy melts
- orange sprinkles
Instructions
- Line a 9×13 pan with parchment paper.
- Melt butter in a large pot on medium-low heat. Add 1 ½ bags of mini marshmallows to the melted butter and set the remaining marshmallows aside.
- Stir continuously until the marshmallows have completely melted while keeping the heat on low.
- Remove the pot from heat and mix in vanilla, salt, and food coloring until desired color is achieved.
- Incorporate half of the rice krispies into the melted marshmallow mixture, scraping the bottom thoroughly.
- Add the remaining marshmallows and rice cereal, mixing until well-combined.
- Spread the mixture evenly in the prepared pan.
- Let the mixture cool for 10 to 15 minutes.
- Transfer the treat onto a cutting board using the parchment paper and cut into 8 equal sections, then shape into triangles resembling carrots.
- Melt green candy melts in a bowl in 30-second increments and stir.
- Pipe 12 v-shaped stems on parchment paper and refrigerate for 10 minutes to harden.
- Flip the rice krispy treats and cut them into 6 carrot-shaped triangles.
- Melt orange candy melts in a microwave-safe bowl and drizzle over the carrot shapes. Add sprinkles while the candy is still soft.
- Attach the green stems to the top of each carrot with orange candy melts. Allow to set for a few minutes before serving.
Notes
Ensure that the butter is fully melted before adding marshmallows for an even mixture.
Feel free to adjust the amount of food coloring for your desired color intensity.
These treats can be stored in an airtight container for up to a week.
