- 16 ounces frozen pearl onions (or fresh and peeled)

- ½ teaspoon ground black pepper
- ⅓ cup water
- 3 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 2 tablespoons bourbon or brandy (optional)
Instructions
- Cook bacon in a skillet over medium heat until crisp, then transfer to a plate.
- Add reserved bacon fat back to the skillet and sauté pearl onions with salt and pepper for 6 to 8 minutes.
- Pour in water, brown sugar, and apple cider vinegar; bring to a boil and simmer for 5 to 8 minutes until onions are tender.
- Stir in bourbon and cook for an additional 1 to 2 minutes until the liquid thickens.
Notes
Fresh pearl onions can enhance flavor significantly if available.
Stir occasionally to ensure even caramelization and prevent burning.
Adjust brown sugar quantity to achieve desired sweetness.
