Instructions
- Combine granulated sugar and water in a medium saucepan and cook over medium-low heat until sugar dissolves.
- Add butter, increase heat, and bring to a boil without stirring until deep golden color is reached.
- Remove from heat, slowly whisk in heavy cream, then add vanilla and salt to taste.
- Toss diced apples with lemon juice, nutmeg, cinnamon, and brown sugar in a bowl.
- Cook apple mixture over medium-low heat for 10-15 minutes until slightly softened.
- Whip heavy cream, powdered sugar, and cinnamon until stiff peaks form.
- Layer whipped cream, granola, caramel, and apples in serving cups.
- Repeat layers and refrigerate for 2-3 hours before serving.
