- 1 (approx 15 ounce) box yellow cake mix (any flavor)
- ⅓ cup vegetable oil
- 3 large eggs
- 3–4 medium very ripe bananas, mashed (approximately 1 ½ cups or 350g)
- 1 cup mix-ins (optional, see variations for ideas)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare two 8×4-inch loaf pans with nonstick spray.
- In a bowl, mix together cake mix, vegetable oil, eggs, and mashed bananas until blended.
- Fold in any mix-ins if desired.
- Divide the batter between the prepared pans.
- Bake for 43-48 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Use very ripe bananas for maximum sweetness.
Avoid overmixing to keep the bread light and fluffy.
Allow the bread to cool completely for the best texture.
