  • 4 tablespoons unsalted butter, divided

  • 1 red bell pepper, seeded and diced
  • 1 teaspoon garlic, minced
  • 1 ½ cups uncooked long-grain white rice
  • 2 tablespoons Cajun seasoning, divided
  • 3 cups chicken broth
  • 1 pound large uncooked shrimp, peeled and deveined
  • 1 medium lemon, cut into wedges
  • Chopped parsley for garnish

Instructions

  • Melt 2 tablespoons of butter, sauté onion and bell pepper for 3-4 minutes, add garlic for 1 minute.
  • Stir in rice and 1 tablespoon of Cajun seasoning, ensure rice is coated.
  • Add chicken broth, bring to a boil, cover, reduce heat, and simmer for 15-20 minutes.
  • Remove from heat, let sit for 5 minutes, then fluff rice.
  • Mix shrimp with remaining Cajun seasoning.
  • Melt remaining butter in a skillet, cook seasoned shrimp for 2-3 minutes on each side.
  • Fold shrimp into the rice mixture, garnish with parsley, and serve with lemon wedges.
