- 4 tablespoons unsalted butter, divided
- 1 large yellow onion, diced (about 1 ½ cups)
- 1 red bell pepper, seeded and diced
- 1 teaspoon garlic, minced
- 1 ½ cups uncooked long-grain white rice
- 2 tablespoons Cajun seasoning, divided
- 3 cups chicken broth
- 1 pound large uncooked shrimp, peeled and deveined
- 1 medium lemon, cut into wedges
- Chopped parsley for garnish
Instructions
- Melt 2 tablespoons of butter, sauté onion and bell pepper for 3-4 minutes, add garlic for 1 minute.
- Stir in rice and 1 tablespoon of Cajun seasoning, ensure rice is coated.
- Add chicken broth, bring to a boil, cover, reduce heat, and simmer for 15-20 minutes.
- Remove from heat, let sit for 5 minutes, then fluff rice.
- Mix shrimp with remaining Cajun seasoning.
- Melt remaining butter in a skillet, cook seasoned shrimp for 2-3 minutes on each side.
- Fold shrimp into the rice mixture, garnish with parsley, and serve with lemon wedges.
Notes
Ensure shrimp are fresh and properly deveined for the best flavor.
Monitor cooking time for shrimp to avoid a rubbery texture.
Do not skip the steaming step for fluffy rice.
