- 1 pound fettuccine pasta
- 1 pound chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 2/3 cup tomatoes, diced
- 2 teaspoons garlic, minced
- 2 cups heavy cream
- 1 cup chicken broth
- 1–2 tablespoons Cajun seasoning, to taste
- 1½ cups Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook fettuccine until al dente, then drain.
- Slice chicken breasts and season with salt and black pepper. Sear in olive oil until golden brown and cooked through.
- In the same pan, sauté tomatoes and garlic. Add heavy cream, chicken broth, and Cajun seasoning. Bring to a boil, then reduce the heat.
- Stir in Parmesan cheese and let simmer until creamy.
- Combine fettuccine with the sauce and sliced chicken, mixing well.
- Garnish with fresh parsley and serve.
Notes
Do not overcook the chicken to ensure it remains tender.
Adjust the Cajun seasoning based on your preferred spice level.
