- 2 slices of bacon, chopped
- 1 1/2 cups butternut squash, diced small
- 1/2 tsp salt
- 1/2 apple, diced
- 1 shallot, minced
- 2 cups spinach
- 3 eggs
- 2 tbsp goat cheese
Instructions
- Cook the bacon in a skillet until crispy. Remove and drain.
- Sauté butternut squash and apple in bacon grease until softened.
- Add minced shallot and spinach, cooking until spinach wilts.
- Create wells and crack eggs into them, cover, and cook to desired doneness.
- Top with goat cheese, season, and serve warm.
Notes
Cut butternut squash into small, even cubes for consistent cooking.
Experiment with different cheeses for varied flavors.
Store leftovers in the refrigerator for up to three days.
