- 4 medium ripe tomatoes (about 1 lb), cored, seeded, and diced (½”)

- 2 teaspoons balsamic vinegar
- 2 tablespoons fresh basil leaves, thinly sliced
- Ground pepper, to taste
- Balsamic glaze, to taste (optional)
Instructions
- Combine diced tomatoes with 1 teaspoon salt and minced garlic; let sit.
- Pound each chicken breast to about 1 inch thick.
- Brush chicken with olive oil and season with Italian seasoning mix.
- Grill chicken for 5-6 minutes per side until cooked through, or bake at 400°F for 10-12 minutes.
- Mix bruschetta ingredients; adjust seasonings.
- Serve chicken topped with bruschetta mixture.
