Instructions
- Prepare the brownie dough by mixing cocoa powder, flour, sugar, baking powder, and salt. Add melted butter, eggs, and vanilla until smooth. Optionally fold in chocolate chips.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Drop rounded tablespoons of dough onto the sheet and bake for 10-12 minutes.
- Cool the cookies on a wire rack after baking.
- Make the cookie dough filling by creaming softened butter, brown sugar, granulated sugar, and vanilla until fluffy. Gradually mix in flour and salt, and fold in chocolate chips.
- Assemble by spreading cookie dough filling on one brownie cookie and topping it with another.
- Chill sandwiches in the fridge for at least 30 minutes before serving.
