Ingredients

  • ½ small onion, minced
  • 3 garlic cloves, finely minced
  • 3 tbsp gluten-free soy sauce or tamari
  • Juice of half a lemon
  • 1 tbsp maple syrup
  • 2 tbsp nutritional yeast
  • 1 tsp chili garlic sauce
  • 1 tsp spicy brown mustard
  • 2 tsp smoked paprika
  • 1 tsp dry thyme
  • 3035 whole cloves (the spice)
  • 3 tbsp dark brown sugar, packed
  • 1 tbsp spicy brown mustard

Instructions

  • Press and drain the tofu for 3-4 hours.
  • Poke holes into the pressed tofu and create crosshatch patterns.
  • Mix marinade ingredients in a bowl and coat tofu, marinate overnight.
  • Preheat oven to 375°F, prepare tofu with cloves, and bake for 20-25 minutes.
  • Mix brown sugar and spicy brown mustard for glaze, then coat tofu and bake for additional 10 minutes.
  • Baste again with glaze and bake for 15-20 minutes until caramelized.

Notes

Pressing the tofu properly improves texture.
Marinating longer enhances flavor depth.
