- ¾ cup mashed ripe banana (about 2 small bananas)
- 2 tablespoons melted unsalted butter (plus more for greasing the griddle)

- ¾ cup buttermilk
- ¼ cup packed brown sugar (preferably dark brown sugar)
- 1 teaspoon pure vanilla extract
- To serve: butter, maple syrup, sliced banana, walnuts, and/or chocolate chips
Instructions
- Whisk together flour, baking powder, and salt in a large bowl.
- In another bowl, mix mashed bananas, melted butter, egg, buttermilk, brown sugar, and vanilla extract.
- Combine wet and dry ingredients, stirring gently until just mixed.
- Heat a greased griddle over medium-low heat.
- Pour batter onto griddle, cooking until bubbles form, then flip to cook until golden brown.
- Serve warm with desired toppings.
Notes
Use ripe bananas for the best flavor.
Allow the batter to rest before cooking for fluffier pancakes.
Cook on low heat to avoid burning.
