- 1 pound Brussels sprouts, washed and halved
- 2–3 tablespoons olive oil
- 2 ½ teaspoons kosher salt
- 2 ½ teaspoons black pepper
- ½ cup (1 stick / 113 g) unsalted butter
Instructions
- Preheat oven to 425°F (220°C).
- Line a rimmed baking sheet with parchment paper.
- Arrange Brussels sprouts cut side down on the baking sheet.
- Drizzle with olive oil and season with salt and pepper.
- Roast in the oven for about 10 minutes until golden brown.
- Melt unsalted butter in a saucepan over medium heat until bubbling.
- Whisk occasionally until butter turns golden brown with a nutty aroma.
- Drizzle brown butter over roasted Brussels sprouts and serve hot.
Notes
Select Brussels sprouts of similar size for even cooking.
Monitor brown butter closely to prevent burning.
Add garlic or shallots for extra flavor if desired.
