Ingredients

- 2 tablespoons honey
- 1 4-inch sprig thyme
- 3 large fresh figs, halved
- 1/8 teaspoon vanilla extract
- 1 small baguette, sliced into 1/2-inch slices on a slant
- 4–6 ounces Brie cheese, sliced
- 6 slices prosciutto, cut in half lengthwise
- 1 cup arugula
- Additional honey for drizzling
Instructions
- Preheat oven to 400°F.
- In a skillet, combine honey and thyme over medium-low heat for 1 minute.
- Add figs cut-side down and sauté for 2-3 minutes, then flip and cook for another 2 minutes.
- Remove from heat, stir in vanilla extract, and cool slightly.
- Arrange baguette slices on a baking sheet and top with Brie slices.
- Bake for 6-7 minutes until edges are golden and Brie melts.
- Cool, then top with prosciutto, caramelized figs, and drizzle with honey.
- Garnish with arugula and serve warm.
Notes
For a richer Brie flavor, let it sit at room temperature for 15 minutes before using.
Dried thyme can be used in place of fresh thyme but use less.
