- 3 large sweet potatoes
- ½ cup bacon, cooked and crumbled
- 2 tablespoons unsalted butter
- ¼ cup shredded white cheddar cheese
- 6 large eggs
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 1 scallion, minced (for topping)
Instructions
- Preheat oven to 350°F (175°C).
- Prick sweet potatoes with a fork and coat lightly with oil and salt.
- Bake sweet potatoes for 60-90 minutes until tender.
- Once tender, slice each potato in half and scoop out the filling into a bowl.
- Mix filling with bacon, butter, and cheese.
- Spoon filling back into potato skins and create a well for eggs.
- Crack an egg into each well and season with salt and pepper.
- Bake for an additional 15-20 minutes until eggs are set.
- Garnish with minced scallions and serve.
Notes
Use sweet potatoes of similar size for even baking.
Customize filling with your favorite vegetables or meats.
Leftovers can be stored for up to 3 days in the refrigerator.
