- 8 slices thick-cut bacon
- 1 pound ground pork sausage
- 4 slices mild cheddar cheese
- 1 tablespoon unsalted butter
- 8 large eggs, beaten

- 1 large avocado, pitted, peeled, sliced
- ¾ cup cowboy butter, softened, divided
Instructions
- Preheat oven to 425°F, line a baking sheet with foil, and bake bacon for 25-30 minutes until crispy.
- Shape ground pork sausage into patties and cook for 3-4 minutes on each side in a skillet over medium heat. Add cheddar cheese during the last minute.
- Melt unsalted butter in the skillet, beat eggs with salt and pepper, then scramble in the skillet until cooked through.
- Spread cowboy butter on toasted bread, layer sausage, bacon, avocado, and scrambled eggs, then assemble with more toast and cut into triangles.
Notes
For extra crunch, use artisan or whole-grain bread.
Adjust cooking time for eggs to your preferred doneness.
