- ½ cup (125 ml) extra virgin olive oil
- 1 teaspoon salt
- 4 cups (500 g) tapioca flour
- 3 large eggs, room temperature
- 2 ½ cups (250 g) coarsely grated Grana Padano cheese
Instructions
- Preheat the oven to 400ºF (200ºC) and prepare a baking tray with parchment paper.
- Combine milk, olive oil, and salt in a pot; bring to a boil.
- Pour the hot mixture over the tapioca flour and stir until crumbly. Let cool slightly.
- Add eggs and cheese to the dough; mix until sticky but workable.
- Knead dough briefly, then roll into 1-inch balls and space them on the tray.
- Bake for 25 minutes or until golden brown. Enjoy warm.

Use high-quality cheese for enhanced flavor.
If dough is sticky, use a bit of oil on your hands while forming balls.
