Ingredients

  • ½ cup (125 ml) extra virgin olive oil

  • 4 cups (500 g) tapioca flour
  • 3 large eggs, room temperature
  • 2 ½ cups (250 g) coarsely grated Grana Padano cheese

Instructions

  • Preheat the oven to 400ºF (200ºC) and prepare a baking tray with parchment paper.
  • Combine milk, olive oil, and salt in a pot; bring to a boil.
  • Pour the hot mixture over the tapioca flour and stir until crumbly. Let cool slightly.
  • Add eggs and cheese to the dough; mix until sticky but workable.
  • Knead dough briefly, then roll into 1-inch balls and space them on the tray.
  • Bake for 25 minutes or until golden brown. Enjoy warm.
