- 4–5 peaches, cored and cut into wedges (skin on)
- 1 stick (8 tablespoons) butter, plus more for greasing
- 1 ¼ cups granulated sugar, divided
- 3 large eggs
- 1 cup all-purpose flour
- ¼ cup almond flour
- 3 tablespoons bourbon
- ½ teaspoon cinnamon, divided
- ½ teaspoon vanilla extract
- 1 teaspoon baking powder
- ¼ cup water (for caramel)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9-inch cake pan with butter and line with parchment paper.
- Arrange peach wedges in the pan and sprinkle with cinnamon.
- Make bourbon caramel by heating sugar and water until light brown; mix in bourbon and pour over peaches.
- Cream butter and ¾ cup sugar until fluffy, then add eggs and vanilla.
- Combine dry ingredients and mix into wet until just combined.
- Pour batter over peaches and bake for 30-35 minutes.
- Cool for 15-30 minutes, then invert onto a serving plate.
Notes
Use room temperature butter for smoother creaming.
Do not stir the sugar while making caramel to avoid crystallization.
Let the caramel cool slightly to prevent burns when pouring.
