Instructions
- Blend frozen blueberries, coconut milk, oat milk, lemon juice, maple syrup (or dates), vanilla, and salt until smooth.
- In a bowl, mix chia seeds with the blended blueberry mixture and stir until combined.
- Cover and refrigerate for 5 minutes, then stir again to avoid clumping.
- Let the pudding sit for an additional 10 minutes to thicken before serving.

Ensure blueberries are fully blended for a smooth texture.
For a thicker pudding, allow it to set longer in the fridge.
