Ingredients

- 1 cup water, plus more as needed
- 1 large beet (or 2 medium), scrubbed, ends removed and cut into wedges
- 2 large carrots, washed, peeled and cut into chunks
- 1 stalk celery, cut into chunks
- 1 large red apple, cut into wedges (core removed)
- 1-inch piece of fresh ginger, peeled
- Juice from 1 lemon
Instructions
- Combine all ingredients in a large, high-speed blender.
- Blend on high speed until completely smooth.
- Strain the mixture using a mesh strainer and cheesecloth.
- Squeeze the cheesecloth to extract remaining juice.
- Add lemon juice and stir to combine.
- Serve immediately or store in the fridge.
Notes
Use a high-speed blender for the best texture.
Consider organic produce for better flavor and nutrients.
Dilute with more water or add a bit of honey for sweetness if needed.
