Instructions
- Combine crushed digestive biscuits and melted butter until sandy in texture.
- Press the mixture into an 8×8 inch lined baking pan and chill for 20 minutes.
- Blend ground pistachios, confectioners’ sugar, and heavy cream until smooth, then spread over the chilled base.
- Chill again for 20 minutes.
- Beat cream cheese with confectioners’ sugar and vanilla until creamy, then layer it over the pistachio layer.
- Cook blackberries, sugar, lemon juice, and cornstarch in a saucepan until thickened, then cool and spread over cream cheese layer.
- Chill until set, and sprinkle with chopped pistachios and fresh blackberries before serving.
